Born in Turin and trained by renowned master pizzaioli, Mirko moved to Quebec in 2012 to share his passion for Neapolitan pizza. Now Executive Chef at NO.900, AVPN-certified instructor, and World Champion of STG Neapolitan Pizza in Las Vegas (2025), he embodies true Italian authenticity.

Fiodar Huminski
A passionate pizzaiolo and AVPN-certified instructor, Fiodar is the executive chef and co-founder of Loclai pizzeria. Trained alongside master Mirko D’Agata, he blends Neapolitan tradition with creativity and represents Quebec in several international competitions.
